1 (2 1/2 pound) beef tenderloin
2 tablespoons Dijon mustard
salt and pepper to taste
1 tablespoon honey
2 tablespoons Olive Oil
1 tablespoon garlic chopped
1 small onion peeled and thinly sliced
1 tablespoon Olive Oil
1 1/2 tablespoons fresh thyme no stems
Preheat oven to 450ยบ. Season beef with salt and pepper to taste. Over medium hight heat, add 2 tablespoons oil to a nonstick skillet. Brown beef on all sides, about 5 minutes per side. Let beef cool 5 minutes. In a bowl, whisk together Dijon mustard, honey, garlic, olive oil, and thyme. Rub mixture on meat. Spread sliced onions on sheet pan or shallow pan and lay beef on top. Roast 20 to 25 minutes for medium rare.
